Answer to Question 1

The formula is not as important as the reason for choosing it. Any of the liver formulas would be about the same. The answer should consider: amount of protein (and kind), carbohydrate and kcals, vitamins, minerals, fat (and source), and fluid required to meet the patient's needs. In order to be able to give an example of a proper answer for the next two questions, assume a student listed NutriHep as his/her choice.

Answer to Question 2

tofu: soybean curd; high in protein, iron, and Ca if the protein is precipitated with Ca salts.

somen: noodles frequently made of millet and barley. Source of CHO and some B vitamins.

mochiko: rice flower. Source of CHO, and some B vitamins.

seaweed: any sea plant or plants; especially any marine alga. High in iodine, selenium, Na, K, and minerals in general.

bamboo shoots: young, tender, shoots of the bamboo plant; high in potassium, 3.5 g protein and 6.9 g CHO per cup.

millet: a cereal grass whose small grain is used for food; some B vitamins and CHO.

mushrooms: a rapid growing, fleshy fungi, having a stalk capped with a umbrella like top; good source of most B vitamins.
