Answer to Question 1

Excesses include: total fat, saturated fat, cholesterol, energy, protein, caffeine, and sugar. Compared to the total amount of food he is eating, his fiber intake is not high. If he reduces his total intake, and reduces everything, he will be low on fiber. This is also true of calcium, and possibly vitamins C and A.

Answer to Question 2

I estimate his kcals to be about 5000 and 150 g + of protein. One of my students entered Mr. Y's intake into a diet analysis software program, 151 g of protein, and obtained 5715 kcals and 261g of fat and this did not include all of the snacks.
