RB believes it is all right to skip breakfast, eat light during the day, and eat a big meal at night. Is anything wrong with this kind of thinking? If so, identify the problem and describe the solution.

Using the information obtained above, evaluate RB's diet for nutrient deficiencies and/or excesses.

Answer to Question 1

The problem is eating considerably more kcals than needed and going to bed. During sleep, our BMR decreases, and the excess kcals will be converted to fat. During the day, RB eats enough to keep his blood sugar at a level that prevents fat breakdown. He does no exercise to burn the excess kcals; thus, there is a daily increase in weight.

Answer to Question 2

RB's diet is high in total fat, saturated fat, cholesterol, and salt. He has a variety of vegetables in his diet and seems to have most vitamins and minerals covered but there is no mention of fruit. Protein and dairy products seem to be adequate. He needs more of the soluble fibers in his diet. He needs to increase his total liquids.
