Set small goals for SP to reach in a very reasonable amount of time. Do not put emphasis on weight gain but on the improvement of diet and the increase of kcals. Encourage SP to quit counting kcals and to just eat a balanced diet. Encourage SP to eat with a close friend or relative who understands her condition and will encourage her. There are many other areas that could be explored. The length and extent of this answer would be up to the instructor.
