A few plant fats, such as coconut and palm oil, are naturally solid and a few animal fats, such as fish oil, are naturally liquid. Food processing may make fats more solid (by hydrogenation), but not necessarily. Some natural fats, such as butter and lard, are solid rather than liquid. Organic fats are not necessarily more liquid. Refining refers to processing grains to remove the bran and germ and does not affect the consistency of the oil.
