Polyunsaturated fatty acids have two or more double bonds on the carbon chain. Fatty acids with one double bond on the carbon chain are monounsaturated; those with no double bonds are satu-rated. Polyunsaturated fatty acids are vulnerable to oxidation, but this is not part of their struc-ture.
