Answer to Question 1

Like Scotch, Irish whiskey is made from a mash based on barley (with added corn and rye). The difference is that in Ireland the malted barley is dried in coal-fired ovens, in Scotland the barley is dried over peat.

Figure 13.8 identifies some food cost-related challenges that are within a manager's ability to control. Additional examples include ineffective procedures to estimate production volumes with subsequent left-over food that cannot be re-used, employee theft of raw food products and unapproved employee eating practices, and improper procedures for delivering and re-stocking foods on self-service buffet, dessert or other help-yourself items.
