Answer to Question 1

When a guest's name is known and used it adds value for the guest's visit.

Answer to Question 2

Formal dining sometimes includes the use of finger bowls at the end of a meal with shellfish or finger foods. Place a small bowl filled with warm water on an underliner (small plate) garnished with a lemon wedge to the left of the guest. Extra napkins are also provided for guests to wipe and dry their hands. Hot towels or a packaged moist towelette may also be used.
