Where applicable, drug screening maybe very useful and may be required by many food service operations. The use of open-ended questions during interviews with careful attention paid to responses might be considered a type of selection test. For example, experienced kitchen personnel might be tested to learn their present level of skills as, for example, when they are asked to prepare a white sauce (or, at least, to indicate the ingredients in it). Experienced servers may be asked to demonstrate how to carry a food service tray or to suggest tactics for up-selling food items.
