The two basic methods used to establish drink prices are the beverage cost percentage and the contribution margin (CM) methods. When using the beverage cost percentage method, managers set their drink prices based on the product cost of the drinks sold. These product costs are expressed as a percentage of the drink's total selling price. In the contribution margin method, a fixed amount required to recover the non-beverage costs of producing the drink and a predetermined profit amount per drink are added to the drink's product cost to arrive at the drink's selling price.
