Answer to Question 1

More than you currently need. The objective is to have enough items on hand so the restaurant does not run out while minimizing the loss caused by spoilage and/or theft.

Answer to Question 2

EP means edible portion, and AP means as purchased. The EP of food is the food AP minus the weight lost in preparation and cooking.
