The French Revolution had two effects. First, it accelerated the breakdown of trade guild laws and furthered the deregulation of food preparation. This led to new entrepreneurial activity and innovative hybrid forms of foodservice. Second, it resulted in a dramatic increase in the supply of trained culinary talent, which had previously been employed by noble families.
