Finally, many customers consider theirown health-related concerns before choosing a specific menu item. Health-relatedconcerns may be about the levels of fat, sodium, or the total numberof calories in a dish. Some customers observe vegetarian, organic, orreligion-based diets that affect menu choice. Still other guests may avoiditems because of food allergies.
