For a successful restaurant, do you come up with a concept and then figure out the financials? Why? What are the potential restrictions on the concept from the location? How does the location inform the concept?

Generally speaking, it's difficult (and unwise) to prepare financial forecast without a firm concept.Some concepts are inappropriate for certain locations and some locations are a poor match for certain concepts - a location that has demographics fitting for burgers may not be optimal for Mongolian barbeque.

Restrictions on the concept from the location:
 Some locations do not have appropriate ventilation
 Some locations have been pigeonholed to a certain concept (Quick Service Restaurants (QSR) near Universities)
 The demographics of a certain location may not be optimal for a concept

How a location can inform the concept:
 A location with high concentration of a certain demographic
 The location may have specific or single use that lends itself to a narrow concept
