The greatest influence on Mexican cuisine from outside, just based on the
ingredients that expanded the Mexican repertoire, would be Spain. The Spanish
introduce rice (think of Mexican cuisine without it); domesticated animals like pigs
and cows; sugar, spices, almonds, and citrus that the Spanish had received from
the Moors; flan; and cooking techniques like bread baking, adobo, and sofrito.
