Answer to Question 1

There were three significant civilizations which were important to the early development
of Greek culture. These were the Cycladic, the Minoan, and the Mycenaeans. The all had
an influence on the development of Greek cuisine but, none more than the Minoans. The
Minoan civilization developed on Crete from 2700 BCE to 1400 BCE. They built the
foundations of Greek culture and cuisine. They were sailors and traders who brought
foods and cooking techniques back to Greece from the different regions. Minoan cooks
used fresh local ingredients in their cooking. They used a wide variety of ingredients
including fava beans, chickpeas, lentils, bay leaves, oregano, thyme, wild animals plus
pigs, sheep, and cattle. From the sea they used octopus, shrimp, and fish. They knew how
to roast meat, stew meats with greens, and make fruit pastes. They also knew to process
olives for oil and make wine. They, more than any other culture, laid the foundation for
not only Greek cuisine but also for Western cuisine as a whole.
