In general, how does the food of northern Italy differ from the food of the south?

The northern areas of Italy, in general, have brought forth foods and dishes which
are meatier, more dairy-based, and richer while in the south the food is lighter in
fat, spicier, and definitely more tomato-based. While there are seafood dishes in
many parts of the north in Italy, southern Italy is more renowned for fish and
seafood. The pasta in northern Italy often contains eggs while the pasta in the
south often does not. There are more citrus fruits in the south and a more general
use of vegetables in its cooking. The northern part of Italy is known for its cured
meats, rice dishes like risotto, aged cheeses like Parmigiano-reggiano, and white
truffles.
