Thailand is one of the few cultures on earth which established two levels to its
cuisine, similar to Haute Cuisine and Cuisine Paysanne in France. The two types
were the royal or palace cuisine that was prepared for the royal family and their
entourage, and the peasant cuisine of most of the people. Palace cuisine is
sweeter, less intense, with lots of coconut milk and fruits and vegetables, especially
presented in elaborate carvings and table displays. The peasant cuisine is similar
to the foods and dishes that one finds in most Thai restaurants in the US. Both
cuisines contain seafood, rice, and fish. The peasant cuisine is spicier and bolder
than the palace cuisine.
