Answer to Question 1

The method for preparing Thai coconut curry begins by heating oil or coconut
cream in a pan. If using coconut cream it has to be heated to reduce so that it
breaks. Into this oil or coconut the curry paste is added (different pastes used
depending upon the type being made). It is mashed down and additional flavorings
such as ginger, garlic, or cilantro stems can be added. Next the protein choice or
hard vegetable is added to the paste and cooked along with perhaps mashed
lemongrass and kaffir lime leaves. Now tender vegetables should be added and the
curry is simmered until the vegetables are semi-soft. Finally, palm sugar, fish
sauce, fresh lime juice, and salt may be added to increase the flavors. The dish is
served with steamed jasmine rice and garnished with thai bird chilies, basil,
cilantro, or mint.
