Celiac disease is an autoimmune condition that affects one out of every
133 Americans. A person with this condition cannot eat wheat, rye, or barley
because they contain a protein called gluten. People with celiac disease avoid
gluten because when they eat food containing it, their immune systems react
by destroying their intestinal villi. There is no cure for celiac disease, and a
gluten-free diet is required to maintain health.
Lactose intolerance is the inability to digest lactose, which is the sugar found
in milk and other dairy products. It is caused by a deficiency of the enzyme
lactase. Symptoms of lactose intolerance are diarrhea, gas, and bloating.
Many people with lactose intolerance can enjoy some dairy. One of the main
Differences between food intolerances and food allergies is that intolerances
do not involve the immune system. Some people may be sensitive to food
additives like sulfites or monosodium glutamate.
