Answer to Question 1

Immerse the candy thermometer bulb in water without touching bottom of pan. Determine the boiling point of water on the thermometer by monitoring the mercury level. If the boiling point is below the standard 212F, subtract the number of degrees below this point from the recipe's cooking temperature.

Answer to Question 2

Place a small amount of syrup in cold water. Observe drop and pinch between fingers. This test indicates the consistency of the candy once it cools.
