Answer to Question 1

The formation of an emulsion by decreasing surface tension of the liquids; the non-polar end dissolves in the lipid phase, and the polar end dissolves in the water phase of the emulsion.

Egg yolks contain lecithin, which is an emulsifier that keeps the oil dispersed in the liquid in mayonnaise.
