Answer to Question 1

Yeast dough is kneaded to distribute the yeast throughout the dough and to remove any excess CO2 in order to prevent overstretching of the gluten.

Answer to Question 2

The dough is punched down to avoid overstretching the gluten cells, distribute the gas cells uniformly, equalize the temperature, and redistribute the food for the yeast.
