Answer to Question 1

During fermentation of yeast bread, the yeast converts the complex carbohydrates into simple sugars for food, and carbon dioxide and alcohol are released, which helps the dough to rise. Fermentation is done when the dough rises to about double its original size.

Answer to Question 2

Dough is fermented and proofed to make the bread rise and allows the gluten to become smooth and elastic. The ideal temperature for fermentation is 80F.
