Answer to Question 1

Granulated sugar yields fewer cups per pound than brown sugar (i.e., 1 lb. of granulated sugar equals 2 c. while 1 lb. of brown sugar yield 2  c.). In a recipe, less brown sugar should be substituted for the granulated sugar.

Answer to Question 2

Unlike granulated sugar, brown sugar has a tendency to pack down and become hard because it contains 2 moisture, which has a tendency to dry out. Brown sugar lumping prevents precise measurements. Brown sugar is best measured by pressing it firmly into a fractional metal measuring cup and leveling it.
