One oz. measures weight and 1 fl. oz. measures volume of liquid.

Answer to Question 2

Aluminum  good heat conductor; lightweight; lighter color reflects heat and decreases incidence of over baking; light golden cookie bottom.
Non-stick pans  coated with fluorocarbon resin (Teflon); scratch easily; used for low-fat cooking; darker pans absorb heat and result in a darker product; dark cookie bottom.
Glass pan  poor heat conductor; no reaction with foods; light cookie bottom  not cooked as thoroughly as with aluminum pan.
