A one-cup graduated liquid measuring cup filled to 1 c. measure is best to measure 1 c. milk; -c. fractional measure filled to  c. is best to measure  c. granulated sugar.

Answer to Question 2

Stem thermometer  requires calibration; may be calibrated by adjusting the hex nut under the thermometer dial; temperature range from 0F to 220F.
Candy thermometer  designed for high heat with a usual range of 100-320F for home use thermometers and 60-360F for commercial models. Candy thermometers have a clip on the side to hold them inside the edge of the pan. Candy thermometers are calibrated by determining the boiling point of water on the thermometer and adjusting the temperature accordingly.
