Sensory evaluation is a scientific discipline used to evaluate characteristics of food and materials as they are perceived by the senses of sight, smell, taste and hearing. Food is analyzed for quality based on its appearance, flavor, aroma, texture, and sound. Sensory evaluation will lead an individual to accept or reject a food.
