Answer to Question 1

You could suggest that he cut down from eating meat 5-6 times a week to 3-4 times a week at first. He can slowly reduce his meat consumption further as he finds other foods to replace the meat at the center of the diet.
He could replace meat with fish to maintain his protein intake but reduce his saturated fat intake at the same time. This would also ensure that he is getting enough omega-3 fatty acids.
He could start eating more pasta dishes to reduce his meat intake but still enjoy a filling, nutritious meal.
He could try some of the vegetarian products such as veggie burgers or soy-based products to still obtain complete proteins but reduce his overall calorie and saturated fat intakes.
