The microvilli of the small intestine break down and are not easily repaired if the diet lacks carbohydrates, vitamins, minerals, or protein. The absorptive area of the small intestine shrinks to a tenth of its original size. This can lead to further malnutrition because, even when more nourishing food becomes available, the digestive system may not be able to absorb the needed nutrients.
