The cephalic phase of digestion begins even before food enters your mouth. During this phase, the thought, smell, and sight of food stimulate the central nervous system. In turn, neural signals travel from the brain to the GI tract, stimulating GI motility and the release of digestive secretions. This response serves as a wake-up call to your GI tract, preparing it to receive and digest food.
