Answer to Question 1

Fats are classied as either simple, compound, or derived fats, or trans fatty acids. The triglycerides are the most
notable of the simple fats. Fatty acids are classied as either saturated or unsaturated depending on their
chemical structure. For nutritional considerations, the most important of the compound fats are the lipoproteins.
Cholesterol is the best example of the class of fats called derived fats. Tr ans fatty acids have a more complex
structure than the other classes of the fatty acids and tend to raise LDL and total cholesterol in the blood.

Answer to Question 2

Carbohydrates: fruits, vegetables, grain products. Fats: vegetable oils, meats, dairy products. Protein: meats and
grain products.
