It can take a couple to several hours to actually experience the food's effect on the mood. The average time a food spends in the stomach is 1-2 hours and the time spent in the small intestine for final digestion and absorption of nutrients is 2-8 hours. After this point, the nutrients are in the blood and will exert their effects throughout the body.

Some people may experience a placebo effect since they may know that a certain food is good for them. The act of eating that healthy food puts them into a better mood in general.
