Many studies, performed within the last 10-20 years, have linked high levels of saturated fat intake with elevated levels of low density lipoprotein (LDL). High levels of LDL may lead to inflammation and obstruction in the arteries which can result in increased risk of cardiovascular disease. There are studies, going on currently, that are re-examining the role of saturated fats in the development of cardiovascular disease.
