People need to find foods that contain the nutrients found in wheat and other grain products that contain gluten protein. For example, people need to get enough fiber, minerals such as iron or potassium, and many of the B vitamins. Foods like nuts provide fiber and minerals. Nuts should not be coated with any type of grain product so dry roasted version would still be gluten free. People can also take in whole fruits and vegetables to obtain fiber as well as many of the B vitamins. Iron can be found in green vegetables such as spinach as well as meats. As long as people practice variety and balance in their diet (getting enough foods from the key food groups (other than grains) and also eating a variety of foods within a food group such as fruits or vegetables), they should be able to obtain all of the nutrients that would be found in gluten-containing foods.
