The Mediterranean diet emphasizes a diet of olive oil, lean meats, vegetables, and nuts. Many of these foods have a low glycemic load which means that these foods do not cause a rapid increase in blood glucose levels after ingestion. Fiber in foods also can slow down the absorption of glucose into the blood. This helps to control the swings in blood glucose that many people with diabetes experience.
