High quality carbohydrates contain a wide variety of nutrients, including phytonutrients and fiber, which slows digestion, reducing blood sugar spikes, and helping to prevent type 2 diabetes. Low quality carbohydrates contain mostly refined grains, which have been stripped of their healthy nutrients by removing the bran and germ.
