Behavior change theories and models provide a research-based rationale for designing and tailoring nutrition interventions to achieve the desired eect. For example, if during a nutrition assessment interview the patient acknowledges that she or he does not believe that making signicant behavior changes will result in a better health outcome, principles of the health belief model as well as awareness of the stages of change should inuence how the counselor proceeds and what type of information is appropriate to promote a change in belief and movement to the next stage of change. Table 4.7 provides a summary of the major theories that support nutrition education and counseling methods.
