See pp. 7-2 to 7-6 for a detailed description of digestion. In brief, food passes through the digestive system and is mechanically and chemically dismantled into absorbable units. Key organs involved in digestion are:


Mouth - food is chewed, salivary and lipase begin starch and fat digestion

Stomach - food is liquefied through mixing/churning, HCl and pepsin chemically digest protein

Small intestine - bile from the liver breaks up fat; pancreatic and intestinal enzymes complete chemical digestion of carbohydrate, protein, and fat

Large intestine - bacterial residents digest some fibers and resistant starches
