Nutrition security requires that all people have access to a variety of nutritious foods and potable drinking water; knowledge, resources, and skills for healthy living; prevention, treatment, and care for diseases affecting nutrition status; and safety-net systems during crisis situations such as natural disasters or deleterious social and political systems. Regardless of race, religion, sex, or nationality, our bodies experience similarly the effects of hunger and its companion, malnutritionlistles sness, weakness, failure to thrive, stunted growth, mental retardation, muscle wastage, scurvy, anemia, rickets, osteoporosis, goiter, tooth decay, blindness, and a host of other effects, including death. Apathy and shortened attention span are two of a number of behavioral symptoms that are often mistaken for laziness, lack of intelligence, or mental illness in undernourished people. Malnutrition is the biggest risk factor for illness worldwide. Some two billion people, mostly women and children, are deficient in one or more of four essential micro nutrients: iron, zinc, iodine, and vitamin A.

Answer to Question 2

Overall, survey results suggest that we are well nourished, but are generally over fat, under-exercised, and beset to some extent with nutrient deficiencies. Generally speaking, we do not consume enough fruits, vegetables, and dairy. We tend to be somewhat knowledgeable about nutrition, but our behaviors do not illustrate that.
