Now that you have learned about several of the major minerals important to bone health, you might want to again consider JoAnn, the person with bone disease who was featured at the beginning of this chapter. You might want to consider how a college student on a limited budget can ensure adequate nutrient intake (particularly major minerals) to optimize bone strength. What bone-building nutrients would be the most difficult to obtain on a limited budget?

Answer to Question 1

A diet rich in bone-building nutrients would include vitamin D, calcium, phosphorus, magnesium, and protein. A rich source of calcium is milk and milk products, all of which are expensive. Rich sources of both phosphorus and protein are meat products, nuts, and seeds, of which all are expensive. A rich source of magnesium is whole-grain products. Currently, a loaf of whole-grain bread costs approximately 3.50-4.50, so prices have increased for this staple food item too. Vitamin D is cheap if JoAnn can obtain some sunlight each day. Since JoAnn lives in Idaho, during the winter months, she may need to rely upon vitamin D-fortified milk. To maintain a diet rich in the bone-building nutrients, a college student will need to carefully plan his/her dietary intake of these nutrients. Knowing that most of the easy, rich sources of the bone-strengthening nutrients are expensive is good information, because then the student can choose cheaper food alternatives such as grain products, dark green vegetables, non-fat dry milk powder, and fortified food items. Maybe a fishing trip is a good idea, since fish contain all five bone-building nutrients in abundance.
