Answer to Question 2

If JoAnn became lactose intolerant, then she would need to be more cautious about her dairy choices. She could use a lactase supplement to encourage better digestion of her dairy choices (milk, cheese, ice cream, sour cream, and some yogurts). However, there are many other choices of foodstuffs available besides dairy products that offer sufficient calcium to maintain an adequate intake for JoAnn. Some ideas for calcium-rich, non-dairy food items might be: collard greens, spinach, salmon, sardines (with bones), and most legumes. In addition, JoAnn might consider opting to choose calcium-fortified foods such as breakfast cereals, orange juice, and soy products. In addition to calcium, JoAnn needs to keep in mind the need for sufficient dietary or sunlight-derived vitamin D to help with maximizing calcium absorption and utilization within the cells.
