BSE stands for bovine spongiform encephalopathy, a disease in cattle caused by a prion that attacks the central nervous system. Cattle get BSE from eating feed that is contaminated with the prion. Consumption of the prion in contaminated beef is thought to cause Creutzfeldt-Jakob Disease (vCJD), a disease similar to BSE, in humans.
