Answer to Question 1

The basic standard for children in child care for more than eight hours is the provision of at least two meals and two snacks or one meal and three snacks, and those in care for fewer than eight hours should be offered one meal and two snacks or two meals and one snack.

Answer to Question 2

The MyPlateSupertracker Food Tracker on the MyPlate website allows a teacher to put in what a child ate in a day and get immediate feedback as to what was missing in the daily diet of the child. Another method of nutritional assessment is the food frequency questionnaire. A third type of nutritional assessmentis direct observation of food intake. Another observational method is to videotape a child's food intake and habits over a period of time to see his or her eating pattern and food intake. Another method is the 24-hour dietary recall. This information is relatively easy to obtain and can be done in several ways. With this method, the parents and teacher create a list of foods eaten, including an estimate of how much food is eaten.
