Government oversight includes mandatory inspection by the Food Safety and Inspection Service of the U.S. Department of Agriculture (USDA) at practically every step of livestock procurement and meatpacking processes.
Meat grading is a service offered to packers on a voluntary basis by the Agricultural and Marketing Service (AMS) of the USDA.
