To begin the process of preparing a northern or southern style curry it is important to
have a basic understanding of what ingredients you might need. For a north Indian curry
common ingredients would be ghee, onion, garlic, ginger, cumin, coriander, red chilies,
turmeric, cardamom, cinnamon, cloves, aniseed, fennel, and garam masala. In south
India one might use coconut or vegetable oil, black mustard seed, tamarind, chilies,
fenugreek seeds, fresh curry leaves, asafetida, and black peppercorns.
The technique for making a northern curry would be to: 1 . Cook whole spices in fat until
they smell good; 2 . Add aromatic vegetables such as garlic, ginger, onions and cook all
through; 3 Add dry ground spices with water or vinegar or tomato form a paste, cook to
reduce; 4 . Add liquids such as tomato, tamarind, coconut milk, water, or brothcook
down; 5 . Add proteins and vegetablescook through.
The technique for making southern curry would be to: 1 . Saute aromatic vegetables; 2 .
Puree sauted aromatic vegetables, add dry spices, coconut milk, tamarind, or water; 3 .
Marinate protein in paste; 4 . Heat fat in a pan and add whole spices, add puree and
simmer until thick; 5 . Stir in vegetables, marinated proteins, or cooked legumes; 6 . Add
liquid ingredients like water, tomato, or coconut milk and simmer until done; 7 . Can do a
tempering of spices if needs flavor.
