Stir frying uses a very small amount of fat. The pan is held stationary, while the food is turned over very quickly with utensils. Items that are stir fried are not breaded. Oven frying also uses very little fat. Items that are oven fried are breaded and placed in the oven at a high temperature. Fat content among stir-fried food, oven-fried food, and deep-fat-fried foods varies and is determined by length of fat exposure and breading. Lower heat results in higher fat absorption. Breading or batter protects the food from absorbing too much fat. A fine-crumb breading absorbs less fat than a coarse-grain breading that produces a crisper texture.
