Fat content among stir-fried food, oven-fried food, and deep-fat-fried foods varies and is determined by length of fat exposure and breading. Lower heat results in higher fat absorption. Breading or batter protects the food from absorbing too much fat. A fine-crumb breading absorbs less fat than a coarse-grain breading that produces a crisper texture.
