Answer to Question 1

Gluten-free muffins are expected to be lower in volume and more coarse in grain than oatmeal muffins prepared with all-purpose flour.

Answer to Question 2

Usually 4 the amount of water is used to the amount of pasta used. Pasta will double in volume. In other words, 1 cup will yield 2 cups cooked.
