Hen, fowl, or stewing chickens should be used for stewing.

Answer to Question 2

Broilers, fryers, roasters, and Cornish game hens can be used when frying or roasting. Turkey, duck, goose, pheasant, and capons work well when roasting. Younger birds are superior to older birds when frying or roasting because they are more tender.
